Tiramisu filling

 

20 oz Egg Yolk
1.5 oz Sugar
2.2 oz Powder Gelatin
8 oz Rum
4 oz Kahlua
12 oz Expresso
5.5 lbs Mascarpone Cheese
20 oz Egg White
8 pz Sugar
3 qrts Heavy Cream

Whisk the egg yolk and the sugar until fluffy, then set aside. Melt together gelatin, Rum, Kahlua and Expresso on the double boiling water. Then add them into egg yolk mixture, then mix he Mascarpone cheese into the egg yolk. Whisk the egg white with the sugar to stiff, fold the whisked egg white into the Mascarpone mixture. Slowly fold in the whipped cream. Let cool then pour filling into Kane Candy Chocolate Dessert Cups, add fresh berries or chocolate decorations and serve.

Italian Meringue

 

8 oz Sugar
4 oz Fresh Egg White
3 oz Water
8 oz Fruit Puree
(Use Raspberry Puree or Passion Fruit Puree
depending on your flavor)
3 tsp Gelatin Powder
3 oz Whipped Cream
3 oz Egg Yolk
1 oz Sugar

Whip 3 oz egg yolk and 1 ounce sugar to pale white color. Cook water and 8 ounces of sugar to 245°F then pour a slow stream to the whipped egg white. Keep whipping until all the syrup is combined. Mix the puree and gelatin mixture (warmed) to the meringue. Fold in whipped eggs and cream. Let cool then pour filling into Kane Candy Chocolate Dessert Cups, add fresh berries or chocolate decorations and serve.

Cappuccino Cremeux

 

150 g Cream
50 g Milk
2 Egg Yolks
1 Whole Egg
2 sheets Gelatin
1/4 c Expresso
100 g Soft Butter

Combine ingredients together, except gelatin and butter. Bring them to boil, stir carefully with a spatula until it gets thick, add bloomed gelatin, then slowly add in butter, mix well. Let cool and pour filling into Kane Candy Chocolate Dessert Cups, add fresh berries or chocolate decorations and serve.

Chocolate Chai Tea Mousse

 

100 g Chocolate 55%
65 g Milk Chocolate 40%
125 g Cream
75 g Egg Yolk
48 g Sugar
300 g Milk
25 g Chai Tea
290 g Cream

Bring milk to a boil, add chai tea in, let infuse for a few minutes then stain, set aside. Bring the first cream to a boil, pour over both chocolates. Make like ganache. Whisk the egg yolk and sugar until fluffy. Melt bloomed gelatin with chai tea on double boiling water, then add them in egg yolk mixture and fold them in second whipped cream. Let cool then pour filling into Kane Candy Chocolate Dessert Cups, add fresh berries or chocolate decorations and serve.

Coconut Mousse

 

500 g Coconut Puree(warmed)
15 g Gelatin (bloomed)
500 g Whipped Cream
200 g Sugar (cooked to 121° Celsius)
125 g Egg Whites

Bring sugar to 121° while beating egg whites, to make a meringue. Add gelatin to warmed puree. Add half of the whipped cream to the meringue. Add a quarter of the remaining cream to the coconut mixture. Add the meringue and cream to the coconut mixture and fold gently. Add remaining cream and fold gently. Let cool then pour filling into Kane Candy Chocolate Dessert Cups, add fresh berries or chocolate decorations and serve.

Mocha Mousse

 

8 oz Chocolate
1 Egg
5 Yolks
1/2 c Granulated Sugar
1/4 c Water
2 c Cream
1 tbs Coffee Extract

Melt chocolate. Boil water and sugar to 240° Celsius. Begin beating the yolks and whole egg at high speed. When sugar reaches 250°, remove it from the stove. Reduce mixer speed to slow and slowly pour it into the yolk mixture. Whip egg mixture until cool. Whip heavy cream to medium peaks. Mix the coffee extract with the yolk mixture, followed by the cream at medium peaks. While folding the cream mixture, slowly pour the melted chocolate (slightly warm) into cream mixture. Fold quickly but carefully, mixture should be smooth.Let cool then pour filling into Kane Candy Chocolate Dessert Cups, add fresh berries or chocolate decorations and serve.
